Hayman’s Old Tom Gin recently returned after a 60 year absence. The Hayman Distillers history dates back to 1863 with the founding by James Burrough (creator of Beefeater Gin). It continues operations today 40 miles east of London as a family owned business named Hayman Distillers after James Burrough’s grandson, Christopher Hayman, renamed the company.

Hayman’s Old Tom Gin is given a lot of credit for the Old Tom revival, and rightfully so. Old Tom style gin may not be for everyone, but for those of use with a sweeter gin tooth, this hits the spot. It’s soft, but complex.

For some it may seem a bit heavy, but of course the impact of that all depends on how you cocktailize it. A Negroni for example might be the way to go on a cooler evening, while a Tom Collins is the perfect companion for this gin on a summer day. Likewise, you can never go wrong with a gin and tonic.
